I have a 2 year old son and 4 year old daughter. The are fairly good eaters, but I do tend to scale back a bit on the creativity scale for most of our weeknight meals. Sometimes kids can be little picky-pants monsters! Unfortunately, being outnumbered by two little ones means I cook more of what I know they will eat, such as pasta. This dish is a really good compromise between mommy and the kiddos. Pumpkin helps to make a silky smooth sauce without using a large amount of cream. Pick your favorite flavor sausage, I used a roasted garlic and asiago cheese variety this time. Add a little more red pepper flake for heat if you prefer.
Pumpkin & Chicken Sausage Pasta
3 Cups uncooked pasta
1 teaspoon oil
1 12 oz package chicken sausages, sliced
1 cup pumpkin puree
1/2 cup shredded parmasean cheese
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1 teaspoon dried parsley
1/2 cup heavy cream
1/2 cup 2% milk
Boil pasta according to package directions, drain. Meanwhile, in a large skillet heat oil and cook sausage until browned. Add the pumpkin puree, cheese, garlic, red pepper flakes, parsley, cream and milk to skillet. Over medium heat cook until thickened. Add the cooked pasta and toss to coat.
