Valentine’s Day: Some love it, some loathe it. For those in a relationship, it can be a day full of mushy displays of affection and gifts. For those who aren’t with someone though, the day can be a sad one. I used to hate Valentine’s Day, being in the group who doesn’t have a special someone.

This year I have decided to change my tune. It doesn’t have to be a day for romantic love, it can be a day enjoyed with family, showering them with love and lots of CANDY!! I am going to spend it with my children, making a fun Valentine’s dinner and giving them extra hugs and kisses.

These egg-free cookie dough filled Ritz candies are an easy and delicious treat to share with family and friends. My girl Dorothy at Crazy For Crust came up with this idea, and its a good one! They are the perfect combo of sweet and salty, and the buttery crackers taste amazing with chocolate! I chose to cover mine in Valentine’s colors, but feel free to skip the sprinkles and colored candy melts and just go for the almond bark and chocolate if you prefer.

Cookie Dough Stuffed Ritz

Ingredients

  • 4 tablespoons unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/8 teaspoon salt, optional
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/3 cup mini chocolate chips
  • About 30-40 Ritz Crackers
  • About 12 ounces melting chocolate, chocolate or vanilla or a combination (such as Candiquik or Almond Bark)
  • Sprinkles, optional
  • Red Candy Melts, optional

Instructions

  • Using a stand mixer or hand mixer, cream together the butter and brown sugar. Add the vanilla, salt, flour and chocolate chips and mix until combined.
  • Scoop 1 tablespoon balls of cookie dough and sandwich them between two Ritz crackers,
  • flatten the balls into a disk to avoid breaking the crackers.
  • Melt chocolate according to package directions. Dip each Ritz cracker sandwich in the chocolate, tapping off the excess, then placing on a cookie sheet lined with wax paper. If you prefer, drizzle the crackers with chocolate rather than dipping. If using sprinkles, add the immediately after dipping so they will stick. Chill to set.

    Taco Chex Mix

    I have a deep respect for school teachers. The patience they have to be kind, caring, and teach our children is a special quality not many people possess. High school teachers especially. I was a teenager once. They aren’t fun. I am currently trying to stunt my children’s growth with mass amounts of coffee in hopes they don’t grow up (I kid I kid!)

    You might think that young kids would be easier. They say such adorable things (I cried the day my daughter stopped calling a sandwich a “namich”) and they are so full of curiosity and wonder. Let me tell you though, that the opposite is true. The first time I volunteered in M’s preschool classroom I was overwhelmed. So many 4 year olds and they have SO MUCH ENERGY. I was exhausted after 4 hours (actually more like 30 minutes.) Props to you preschool teachers. You deserve wine-ALLTHEWINE.

    I whipped up this snack mix for my day to bring snacks to school. I only used 1/8 cup of taco seasoning to keep it tame for the kiddos, but if you like it zesty I would suggest adding the fullĀ  1/4 cup.

    Taco Chex Mix

    Ingredients

    • 4 c. rice chex cereal
    • 4 c. oyster crackers
    • 4 c. Gold Fish crackers
    • 4 c. pretzel sticks
    • 1/3 c. canola oil
    • 1/4 c. taco seasoning mix

    Instructions

  • Preheat oven to 250 degrees.
  • Double line a paper bag.
  • Pour cereal, crackers and pretzels into paper bag. Top with taco seasoning and oil. Fold top of bag down and shake until mixed well.
  • Pour snack mix onto two large baking sheets (with sides). Bake at 250 degrees for 1 hour, stirring every 15 minutes.
  • Cool. Pour into air tight container.
