Easy Red Velvet Skillet Cookie

Food trends are so interesting to me. One person comes up with a great idea, and they next thing you know, the internet is blowing up with a million versions of that recipe.

Skillet cookies seem to be super popular on Pinterest lately, and I can see why. They are delicious! So much more fun than individual cookies, and if not over baked stay perfectly gooey in the middle, perfect for topping with ice cream.

This red velvet version is perfect for sharing with your sweetie on Valentine’s Day. Lots of white and semi-sweet chocolate chips, a drizzle of hot fudge and melty ice cream atop a gooey red velvet cookie? It’s enough to make anyone swoon!

Easy Red Velvet Skillet Cookie

Ingredients

  • 1 box red velvet cake mix
  • 2 eggs
  • 1/2 cup butter, softened
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • vanilla ice cream
  • chocolate sauce or hot fudge sauce

Instructions

  • Preheat oven to 350 degrees.
  • In a mixing bowl, mix cake mix, butter and eggs until well combined. mix in chocolate chips, saving a few to garnish the top of cookie.
  • Spread cookie dough into a seasoned cast iron skillet. Top with remaining chocolate chips. Bake for 20-25 minutes, or until a toothpick comes out with moist crumbs. Do not over bake. Allow to cool for 5 minutes, top with ice cream and chocolate sauce and serve immediately.

    Valentine’s Krispie Candy Bark

    Today I have for you what might just be the easiest Valentines treat ever! I chose gummy hearts for the topping because they are my most favorite Valentine’s candy that I wait for every year.

    Those and robin’s eggs and Cadbury eggs at Easter. You can bet I am going to be making another version of this come spring!

    I really like using a silpat for this bark, but if you don’t have one a piece of foil sprayed well with cooking spray will also work.

    Valentine's Krispie Candy Bark

    Ingredients

    • 16 oz. meltable white chocolate (I used almond bark)
    • 1 ⅔ c. Rice Krispies cereal
    • 1 c. Valentine's Candies (I used cherry jelly hearts, but M&M', conversation hearts, etc would work)
    • sprinkles (optional)

    Instructions

  • Melt white chocolate over low heat, or in microwave, stirring every minute. Stir in Rice Krispies and until combined.
  • Spread melted mixture on baking sheet lined with silpat or aluminum foil (spray with cooking spray to ensure easy removal). Immediately press candies on top of bark, and decorate with sprinkles.
  • Cool in refrigerator or at room temperature until hardened.
  • Break into irregular pieces; store at room temperature in an airtight containe

    Cupid’s Potion

    cupid potion (1 of 1) What is your opinion on the icky love stuff? Are you all candy and roses and hearts and mushy stuff, or do you want to take all that stuff and burn it to the ground? Maybe somewhere in between? I have been in all of those categories before. Last year I was in the BURN IT ALL category.

    This year though, I am changing my tune. Valentine’s Day doesn’t have to be just for couples. I have decided to devote the day to family love. Spoiling my kids and making them a fun dinner full of lots of hearts and pink and red!

    This cupids potion is really a no-recipe recipe. Just put top vanilla ice cream with your choice of pink or red soda, and a licorice straw for garnish. Easy, fun, festive!

    Cupid’s Potion

    Ingredients

    • Vanilla ice cream
    • Cherry 7-up, Raspberry Cream or Strawberry Cream Soda
    • Licorice for garnish, optional

    Instructions

  • Place vanilla ice cream in glass, top with soda. Garnish with licorice if desired. Serve immediately.

    Red Velvet Cheesecake Ice Cream

    I am still currently in technology hell. My site update is NOT going smoothly, and I am super frustrated. All I want to do is cook yummy food, take pictures of that food and share with my peeps, is that too much to ask? All this computer stuff is making me a little loopy. I dreamt about computer code last night. NOT COOL.

    I know it will get better eventually, but right now I really just want to cry a few tears and bury my head in a bowl of this ice cream.

    Cake has never really been my thang, more often than not I could take it or leave it. Ice cream on the other hand, that I can (have!) eaten my body weight in. This ice cream tastes just like cream cheese frosting, and with big chunks of cake and crunchy pecans it’s a texture lovers dream!

    The custard doesn’t require cooking, which means this ice cream comes together super fast, and would make the perfect treat for your sweetie on Valentines Day!!

    Red Velvet Cheesecake Ice Cream

    Ingredients

    • 8 ounces cream cheese, softened
    • 1 cup sour cream
    • ½ cup half-and-half
    • 2/3 cup granulated sugar
    • Pinch of salt
    • 1/2 cup chopped pecans
    •  2 cups of red velvet cake chunks ( I used a box mix, and cut half the cake into cubes. Freeze the remainder for another use)

    Instructions

  • Add the cream cheese cut into pieces,  sour cream, half-and-half, sugar, and salt to a blender or food processor; purée until smooth. Chill the mixture for at least 8 hours in the refrigerator.
  • When ready to churn ice cream, place the custard in your ice cream maker according to the manufacturer's instructions. Once the ice cream is finished churning, add it to the bowl or container you are going to freeze it in, while layering in pieces of cake and pecans cake crumbs. Use caution not to break up the cake pieces too much. Place the container in the freezer for at least a few hours to allow the ice cream to harden.
